Magni’s Norwegian Apple Cake – Reader Recipe Faves
We’re excited to share our first Reader Recipe fave today!
It comes from Clair at Clarina’s Contemplation and it’s her mother-in-laws famous Norwegian Apple Cake!
Clair’s husband is Norwegian, so Scandinavian baking is something that she’s really gotten into since she’s been married. This apple cake was a family favorite for her husband growing up, and now she’s carrying on the tradition!
The recipe that we got from Clair had all the ingredients measured out in weight, so in the recipe below we just converted that into US baking measurements to make it a bit easier.
One of the ingredients that this simple, but super yummy cake calls for, is caster sugar. What we found out is that it’s basically just a really fine sugar, that’s sort of a mix between regular sugar and powdered sugar. You can find it at specialty baking stores or online, but you can also make your own by simply blending regular sugar up in a blender for a few seconds to make it a lot finer.
To be honest, I’m not totally sure what this does for the cake in the long run, but it definitely worked out well because the cake came out flawless!
Something to note with the batter, is that the more you whip it up in your mixer, the lighter, fluffier and bigger your batter gets. This is a good thing! We let ours go on medium/high speed for a full 2 minutes.
Clair’s recipe instructions called for golden delicious apples, and while they were really yummy and sweet in the cake, I would love to try other types of apples to see how they taste, along with a raspberry version of this dessert! I wonder if it would work (?) The base (batter) is so versatile and not too sweet, that I’m sure you could make a million variations with simply just the fruit and it would turn out amazing every time.
Cason’s a fanatic about ice cream, so of course he wanted a couple of heaping scoopfuls on his piece of warm cake. I opted for a dab of whipped cream instead, and both were equally as delicious.
Honestly, this is just a great cake all around. Not too sweet, not too rich, super easy and quick to bake up for a dinner party or adult birthday cake, and also impressive, because of how fancy the fruit makes the whole thing look in the end!

Suprised that you use caster sugar for the cake….it isn't widely available in Norway. It is called Engelsk sukker (English sugar). Most Norwegians use normal granulated sugar for baking. I seek out caster sugar myself because I'm an expat Brit and it is what I am used to using:)

I think butter would work just fine, but I haven't tried it. I can't see why it would make a huge difference. Margarine does contain more water, but I'd love to know if you try it!

Made the cake today with Gala apples, butter and regular granulated sugar. I also "greased" the pan with butter and a light dusting of granulated sugar. It turned out delicious! My husband Bart lived in Norway for 15 years, and he said this is the best apple cake he has ever tasted, and he was a self proclaimed Norwegian apple cake connoisseur extraordinaire!
